I know I’m not alone when I say that my favorite Panera dish is the Mediterranean grain bowl (with or without chicken). Since I’m trying to avoid public places (thanks Coronavirus!), I’ve found myself making it at home on repeat! Here’s what I use to replicate the flavors of this healthy and filling dish:
- Quinoa, cooked in chicken broth or with 2 tsp of Better than Bullion chicken base, and 1/2 tsp each herbes de Provence, onion and garlic powder. I use 1/2 cup cooked in this bowl.
- 1/2 cup of halved grape or cherry tomatoes
- 8 pitted kalamata olives, chopped roughly
- 1/2 cup of chopped English (seedless) cucumber
- 4 oz chicken (optional)
- 1 tbsp plain hummus
- 1 tbsp plain Greek yogurt
- 1 lemon wedge
- 1 oz crumbled feta cheese
- 1 tbsp tahini drizzled on top
